PROJECT
KAYU London
An ingredient-led philosophy for a patisserie
A new Mayfair destination defined by craftsmanship, detail and flavour

Nestled in the heart of Mayfair, KAYU at Brook’s Mews is the latest addition to the area’s growing collection of artisan bakeries. Designed by Universal Design Studio, the space brings together French tradition and Middle Eastern influences, creating an environment as thoughtfully layered as the pastries it serves.
Each KAYU location is shaped by a single core ingredient, guiding both its menu and spatial identity. This ingredient-led philosophy allows every boutique to tell a distinct story through flavour, form and design, while providing a flexible framework for the brand’s global expansion.

Layered in both texture and tone, butter is the core ingredient that forms the design philosophy and shapes the identity of KAYU, Brook's Mews to be singular, immersive and memorable.
This approach invites customers and visitors to step into a world where butter is an ingredient and an experience. Every element is designed to envelop guests and invite them to immerse themselves in a butter environment.

“At KAYU, we set out to translate the complexity and innovation of this artisan pâtisserie through the singular concept of its core ingredient in both flavour and form.” – Suzanne Gaballa, Design Director at Universal.
